3pounds chicken pieces thighs, drumsticks or mix
2cupslong-grain white rice
¼cup vegetable oil
1onionFinely Chopped
1bell pepperdiced
3cloves garlicminced
1can (8 ounces) tomato sauce
¼cup sofritohomemade or store-bought
¼tsp saffron threads, crushed and soaked in 2 tablespoons hot water
1tsp ground cumin
1tsp paprika
2 bay leaves
Salt and pepper, to taste
4cups chicken broth
1cups frozen peas
¼cupspimento-stuffed green olives
Instructions
Season the chicken pieces with salt, pepper, ground cumin, and paprika.
In a large pot or Dutch oven, heat the vegetable oil over medium-high heat. Add the seasoned chicken and brown it on all sides. Remove the chicken from the pot and set it aside.
In the same pot, add the chopped onion, diced bell pepper, and minced garlic. Sauté until the vegetables are tender.
Add the tomato sauce, sofrito, saffron mixture, bay leaves, and rice to the pot. Stir to combine.
Return the browned chicken to the pot and add the chicken broth. Stir well.
Bring the mixture to a boil, then reduce the heat to low. Cover the pot and simmer for about 30 minutes, or until the rice is cooked and the chicken is tender.
During the last 10 minutes of cooking, add the frozen peas and pimento-stuffed green olives. Stir gently to incorporate.
