Dominican Tostones
Tostones are a popular Dominican snack made from green plantains. They're twice-fried for extra crispiness and served with a garlic dipping sauce.

Deep Fryer
For frying the plantain slices. A deep fryer can be more convenient, but a eep skillet or pan works well too
Tongs or Slotted Spoon
To flip and remove the tostones from the hot oil
Paper Towels:
To drain excess oil from the tostones after frying
Cutting Board
For chopping the plantain
Knife
To peel and cut the plantains. A sharp knife is helpful for easier and safer preparation
Ingredients
4
Green plantains
2 cups
Vegetable oil
4 cloves
Garlic
1 tsp
Salt
Instructions
Peel the plantains and cut them into 1-inch thick slices.
Heat the vegetable oil in a deep fryer to 350°F (175°C).
Fry the plantain slices until they're golden but not browned, about 2 minutes per side. Remove and drain on paper towels.
Flatten the fried plantains with the bottom of a glass or a tostonera (if available).
Return the flattened plantains to the hot oil and fry until they're crispy and golden brown, about 2 minutes per side. Remove and drain again.
Make a garlic dipping sauce by mashing garlic cloves with salt. Serve the tostones hot with the garlic sauce.
Notes
Tostones are best served immediately while they're still hot and crispy.
