Instructions
Cook the elbow macaroni according to the package instructions. Drain and set aside.
In a large saucepan, melt the butter over medium heat. Stir in the cheddar cheese, Parmesan cheese, and mozzarella cheese until melted and smooth.
Gradually stir in the milk, and cook until the sauce is thickened, about 5 minutes. Season with salt and black pepper.
Combine the cooked macaroni and cheese sauce, then transfer the mixture to a greased baking dish.
Sprinkle the top with Colby and Monterey Jack cheeses.
Bake in a preheated oven at 350°F (175°C) for 20-25 minutes or until bubbly and golden brown.
