Ingredients

  • 1 whole chicken (about 3-4 pounds), cut into pieces
  • 8 cups water
  • 2 cups all-purpose flour
  • ½ tsp salt
  • ½ cup milk
  • 2 tbsp butter
  • 2 cups mixed vegetables (carrots, peas, celery)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • ½ tsp black pepper
  • 1 bay leaf
  • Fresh parsley, chopped (for garnish)

Instructions

  • In a large pot, combine the chicken pieces and 8 cups of water. Bring to a boil, then reduce heat, cover, and simmer for about 30-40 minutes, or until chicken is cooked through. Remove the chicken from the pot and shred it. Set aside.
  • In a mixing bowl, combine the flour and salt. Gradually add the milk and mix until a dough forms.
  • Roll out the dough on a floured surface and cut it into dumpling-sized pieces.
  • In the same pot used for chicken, melt the butter over medium heat. Add the chopped onion, garlic, and mixed vegetables. Sauté until the vegetables are tender.
  • Return the shredded chicken to the pot. Add the black pepper, bay leaf, and enough water to cover the ingredients. Bring to a simmer.
  • Gently drop the dumplings into the simmering broth. Cover and cook for about 15-20 minutes, or until the dumplings are cooked and the broth has thickened.
