Dominican Tostones

Tostones are a popular Dominican snack made from green plantains. They’re twice-fried for extra crispiness and served with a garlic dipping sauce.

Equipment

  • Deep Fryer For frying the plantain slices. A deep fryer can be more convenient, but a eep skillet or pan works well too
  • Tongs or Slotted Spoon To flip and remove the tostones from the hot oil
  • Paper Towels: To drain excess oil from the tostones after frying
  • Cutting Board For chopping the plantain
  • Knife To peel and cut the plantains. A sharp knife is helpful for easier and safer preparation

Ingredients

  • 4 Green plantains
  • 2 cups Vegetable oil
  • 4 cloves Garlic
  • 1 tsp Salt

Instructions

  • Peel the plantains and cut them into 1-inch thick slices.
  • Heat the vegetable oil in a deep fryer to 350°F (175°C).
  • Fry the plantain slices until they’re golden but not browned, about 2 minutes per side. Remove and drain on paper towels.
  • Flatten the fried plantains with the bottom of a glass or a tostonera (if available).
  • Return the flattened plantains to the hot oil and fry until they’re crispy and golden brown, about 2 minutes per side. Remove and drain again.
  • Make a garlic dipping sauce by mashing garlic cloves with salt. Serve the tostones hot with the garlic sauce.

Notes

Tostones are best served immediately while they’re still hot and crispy.
