Ingredients

  • 3 pounds chicken pieces thighs, drumsticks or mix
  • 2 cups long-grain white rice
  • ¼ cup vegetable oil
  • 1 onion Finely Chopped
  • 1 bell pepper diced
  • 3 cloves garlic minced
  • 1 can (8 ounces) tomato sauce
  • ¼ cup sofrito homemade or store-bought
  • ¼ tsp saffron threads, crushed and soaked in 2 tablespoons hot water
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 2 bay leaves
  • Salt and pepper, to taste
  • 4 cups chicken broth
  • 1 cups frozen peas
  • ¼ cups pimento-stuffed green olives

Instructions

  • Season the chicken pieces with salt, pepper, ground cumin, and paprika.
  • In a large pot or Dutch oven, heat the vegetable oil over medium-high heat. Add the seasoned chicken and brown it on all sides. Remove the chicken from the pot and set it aside.
  • In the same pot, add the chopped onion, diced bell pepper, and minced garlic. Sauté until the vegetables are tender.
  • Add the tomato sauce, sofrito, saffron mixture, bay leaves, and rice to the pot. Stir to combine.
  • Return the browned chicken to the pot and add the chicken broth. Stir well.
  • Bring the mixture to a boil, then reduce the heat to low. Cover the pot and simmer for about 30 minutes, or until the rice is cooked and the chicken is tender.
  • During the last 10 minutes of cooking, add the frozen peas and pimento-stuffed green olives. Stir gently to incorporate.
  • Remove the bay leaves before serving. Arroz con Pollo is a delicious one-pot meal that’s perfect for sharing with family and friends!
