Dominican Tostones
Tostones are a popular Dominican snack made from green plantains. They’re twice-fried for extra crispiness and served with a garlic dipping sauce.

Equipment
- Deep Fryer For frying the plantain slices. A deep fryer can be more convenient, but a eep skillet or pan works well too
- Tongs or Slotted Spoon To flip and remove the tostones from the hot oil
- Paper Towels: To drain excess oil from the tostones after frying
- Cutting Board For chopping the plantain
- Knife To peel and cut the plantains. A sharp knife is helpful for easier and safer preparation
Ingredients
- 4 Green plantains
- 2 cups Vegetable oil
- 4 cloves Garlic
- 1 tsp Salt
Instructions
- Peel the plantains and cut them into 1-inch thick slices.
- Heat the vegetable oil in a deep fryer to 350°F (175°C).
- Fry the plantain slices until they’re golden but not browned, about 2 minutes per side. Remove and drain on paper towels.
- Flatten the fried plantains with the bottom of a glass or a tostonera (if available).
- Return the flattened plantains to the hot oil and fry until they’re crispy and golden brown, about 2 minutes per side. Remove and drain again.
- Make a garlic dipping sauce by mashing garlic cloves with salt. Serve the tostones hot with the garlic sauce.
Notes
Tostones are best served immediately while they’re still hot and crispy.
