Ingredients
- 3 pounds chicken pieces thighs, drumsticks or mix
- 2 cups long-grain white rice
- ¼ cup vegetable oil
- 1 onion Finely Chopped
- 1 bell pepper diced
- 3 cloves garlic minced
- 1 can (8 ounces) tomato sauce
- ¼ cup sofrito homemade or store-bought
- ¼ tsp saffron threads, crushed and soaked in 2 tablespoons hot water
- 1 tsp ground cumin
- 1 tsp paprika
- 2 bay leaves
- Salt and pepper, to taste
- 4 cups chicken broth
- 1 cups frozen peas
- ¼ cups pimento-stuffed green olives
Instructions
- Season the chicken pieces with salt, pepper, ground cumin, and paprika.
- In a large pot or Dutch oven, heat the vegetable oil over medium-high heat. Add the seasoned chicken and brown it on all sides. Remove the chicken from the pot and set it aside.
- In the same pot, add the chopped onion, diced bell pepper, and minced garlic. Sauté until the vegetables are tender.
- Add the tomato sauce, sofrito, saffron mixture, bay leaves, and rice to the pot. Stir to combine.
- Return the browned chicken to the pot and add the chicken broth. Stir well.
- Bring the mixture to a boil, then reduce the heat to low. Cover the pot and simmer for about 30 minutes, or until the rice is cooked and the chicken is tender.
- During the last 10 minutes of cooking, add the frozen peas and pimento-stuffed green olives. Stir gently to incorporate.
