Ingredients
- 1 whole chicken (about 3-4 pounds), cut into pieces
- 8 cups water
- 2 cups all-purpose flour
- ½ tsp salt
- ½ cup milk
- 2 tbsp butter
- 2 cups mixed vegetables (carrots, peas, celery)
- 1 onion, chopped
- 2 cloves garlic, minced
- ½ tsp black pepper
- 1 bay leaf
- Fresh parsley, chopped (for garnish)
Instructions
- In a large pot, combine the chicken pieces and 8 cups of water. Bring to a boil, then reduce heat, cover, and simmer for about 30-40 minutes, or until chicken is cooked through. Remove the chicken from the pot and shred it. Set aside.
- In a mixing bowl, combine the flour and salt. Gradually add the milk and mix until a dough forms.
- Roll out the dough on a floured surface and cut it into dumpling-sized pieces.
- In the same pot used for chicken, melt the butter over medium heat. Add the chopped onion, garlic, and mixed vegetables. Sauté until the vegetables are tender.
- Return the shredded chicken to the pot. Add the black pepper, bay leaf, and enough water to cover the ingredients. Bring to a simmer.
- Gently drop the dumplings into the simmering broth. Cover and cook for about 15-20 minutes, or until the dumplings are cooked and the broth has thickened.
