Ingredients
- 2 Lbs Yukon Gold or Russet Potatoes Peeled and cubed
- 1 Whole Head of Garlic
- 2 Tablespoons Olive Oil
- 1/2 cup Unsalted Butter
- 1 cup Whole Milk
- Salt and Black Pepper to taste
- Chopped fresh Chives for garnish optional
Instructions
- Roast the Garlic:Preheat your oven to 400°F (200°C). Cut off the top of the head of garlic to expose the cloves. Place the garlic on a piece of aluminum foil, drizzle with olive oil, and wrap it in the foil. Roast in the oven for 30-40 minutes or until the garlic cloves are soft and golden. Allow it to cool, then squeeze out the roasted garlic.
- Boil the Potatoes:Place the potato cubes in a large pot of salted water. Bring the water to a boil, then reduce to a simmer. Cook the potatoes for 15-20 minutes or until they are fork-tender. Drain the potatoes.
- Prepare the Mashed Potatoes:In the same pot, add the roasted garlic, butter, and milk to the drained potatoes. Mash everything together until smooth and creamy. You can use a potato masher or a hand mixer for this step. Season with salt and black pepper to taste.
