Ingredients

  • 4 Large russet potatoes peeled and diced
  • 3 Leeks white and light greens parts, cleaned and sliced
  • 2 cloves garlic minced
  • 4 cups vegetable or chicken broth
  • 2 cups water
  • 1 cup heavy ceam
  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • salt and pepper
  • fresh chives, for garnish optional

Instructions

  • Prepare the Vegetables:
    Clean the leeks thoroughly by slicing them and washing them in a bowl of cold water. Drain and set them aside.Peel and dice the potatoes and mince the garlic.
  • Sauté the Leeks:
    In your large soup pot, heat the olive oil and butter over medium heat. Add the sliced leeks and garlic. Sauté for about 5 minutes until they become soft and fragrant.
  • Add Potatoes and Broth:
    Add the diced potatoes to the pot and pour in the vegetable or chicken broth and water. Bring the mixture to a boil, then reduce the heat to a simmer. Cover and cook for 20-25 minutes or until the potatoes are fork-tender.
  • Blend the Soup:
    Using an immersion blender, puree the soup until smooth and creamy. If you don't have an immersion blender, carefully transfer the soup in batches to a regular blender and blend until smooth. Be cautious when blending hot liquids.
  • Stir in the Cream:
    Return the pureed soup to the pot and stir in the heavy cream. Heat the soup gently over low heat, but do not let it come to a boil again. Season with salt and pepper to taste.
  • Serve and Garnish:
