Ingredients

  • 4 fillets Mahi-Mahi Fillets 6 ounces each
  • 2 tablespoons Olive Oil
  • 2 tablespoons Lime Juice
  • 2 cloves Garlic minced

  • 1/4 teaspoon Black Pepper freshly ground
  • 1 cup Pineapple fresh pineapple, diced
  • 1 Red Bell Pepper diced
  • 1/4 Small Red Onion finely chopped
  • 2 tablespoons Fresh Cilantro chopped

Instructions

  • In a mixing bowl, combine the olive oil, lime juice, minced garlic, salt, and freshly ground black pepper. Mix well to create the marinade.
  • Place the mahi-mahi fillets in a shallow dish and pour the marinade over them. Ensure the fillets are evenly coated. Allow them to marinate for 10 minutes.
  • Preheat the grill to medium-high heat. Remove the fillets from the marinade and grill for about 4-5 minutes per side, or until they are cooked through and have grill marks.
  • While the mahi-mahi is grilling, prepare the pineapple salsa. In a bowl, combine the diced fresh pineapple, red bell pepper, finely chopped red onion, and fresh cilantro. Toss gently.
  • Serve the grilled mahi-mahi fillets topped with the pineapple salsa. Enjoy the taste of Hawaii with every bite!

Notes
